The traditional Chinese Muslim noodles, popular among Chinese Muslims in North China, are made by kneading dough, slicing it with a curved knife into boiling water, and then cooking it. Afterward, meat and seasonings are added. The most famous version is ShanXi Datong Mee Hiris, known for its unique flavor. The name "mee hiris" comes from the noodles being cut into slices.
